Summary

​Demonstrate Australian vacuum-packed chilled red meat has a superior shelf life in major export markets and Ensure producers, processors and supply chains are implementing tools and practices to achieve and maintain superior shelf life for Australian red meat. The program of work has led to numerous improvements, such as extension of beef and lamb shelf life in the UAE estimated to be valued at $60m to industry.

The projects  P.pip.045304780487  in conjunction with the commercial partners investigate methods to extend shelf life of sheep meat. Project P.pip.0543 investigates the potential usage of the shelf life predictive model in the domestic supply chain and its value back to industry. V.mfs.0402  investigate the antimicrobial intervention using an oxidant based chemical in a commercial plant using their spray chilling system on beef carcases.
