Summary

​This report provides summary data from a survey of the microbiological quality of beef and sheep meat conducted at leading Australian meat processing establishments during January to March, and, June-August 2011.
This survey is the fourth undertaken of the Australian industry and provides valuable data that can be compared with that from previous surveys conducted in 1993-94, 1998 and 2004.
Although this survey data includes results of the microbiological levels of frozen boneless beef and sheep meat trims, unlike previous surveys no sampling of carcases was undertaken although selected primal cuts were sampled from various establishment boning rooms.
