Top tips for cooking during the festive season

MLA Corporate Chef, Sam Burke, shares his practical tips for cooking and preparing Australian beef and lamb to perfection during the festive season.
1. Selecting special quality cuts for the festive season
- Beef: Opt for festive cuts like Whole Tenderloin (Eye Fillet), Tomahawk, Bistecca or a Standing Rib Roast for impressive, presentation, flavour and tenderness.
- Lamb: Butterflied Lamb legs, lamb racks, or lamb shoulder are perfect for roasting or grilling.
2. Preparing the meat
- Thaw properly: If using frozen meat, thaw in the fridge at 4°C for 24–48 hours to maintain its texture and taste.
- Season generously: Use Australian flavours like native herbs (e.g. lemon myrtle or wattleseed), garlic, rosemary, and olive oil. Marinade cuts for at least 2 hours for enhanced flavour.
- Sea salt and pepper – always!
3. Cooking techniques
- Sear first: Sear larger cuts of beef or lamb on high heat to improve flavour with caramelisation, then cook slowly.
- Low and slow for lamb: Slow-cooking lamb shoulder at 140–160°C for 4 hours in a BBQ or oven ensures tender, juicy meat.

4. Resting the meat
- After cooking, rest large cuts for 10–15 minutes under loose foil to allow the juices to redistribute. This keeps it moist and flavourful.
- For steaks, rest for half the amount of cooking time.
5. Pairing with sides
- Complement the rich flavours with sides like roasted vegetables and salads.
6. Serving tips
- Slice against the grain for beef and lamb to keep it tender. For lamb, carve along the bone for clean slices.
- Finish with a drizzle of olive oil or a sprinkle of sea salt for added flavour.
7. Leftover ideas Boxing Day
- Use leftover beef or lamb in salads, sandwiches, shredded beef and lamb tacos and wraps.

Prep marinades, sides, and sauces in advance to reduce stress on the day and ensure everything is ready to serve warm and fresh!
