Aussie Meat Academy launches across South-East Asia

Aussie Meat Academy kicked off in South-East Asia with a month-long August to September roadshow across Singapore, Malaysia and Indonesia. Over 800 representatives from key trade, retail and foodservice operators attended. Red meat knowledge, secondary cut utilisation and butchery sessions were all facilitated by MLA Technical Consultant Calvin Gung and mentor chefs from the respective countries. Enthusiastic retail butchers in Malaysia put what they had learnt into action straight away by revamping their retail display showcase the very next day (see photos below)
Similar sessions are underway between October to December in Vietnam, Thailand and the Philippines. Aside from workshops, 30 food professionals experienced the inaugural Aussie Meat Academy culinary immersions in Dalat, Vietnam and Pattaya, Thailand. As a highlight, Thailand Lambassador Chef Yakup and Japan Lambassador Haruto also did a special four-hands dinner collaboration.
To round up this year’s Aussie Meat Academy events, the Indonesian national butchery and cooking competitions are in full swing across four cities (Jakarta, Bandung, Yogyakarta and Bali). The competitions aim to increase the profile of the butchery profession and inspire chefs and culinary professionals to use more Australian beef in their menus. The competitions will help identify Aussie Beef Mates – a new global ambassador program for beef. Aussie Beef Mates will identify influential food professionals that are passionate, loyal and committed to actively growing the global profile of Australia and its world class beef.
